Ruth Ladd’s Famous Almond Roca

I don’t know Ruth Ladd, but I do know that this Almond Roca has probably been enjoyed by thousands of people who know my friend, Lulu, who shared this recipe with me recently. She has made it every Christmas for many years with her sister-in-law. My version may not look like the original, but I do know how fast it is disappearing…thank you, Lulu!

Ruth Ladd’s Famous Almond Roca
(Make only 1 batch at a time)

1 cup white sugar
1/2 lb. salted butter
3 T. water
1 T. corn syrup

Melt butter then add sugar, mix and add the water then corn syrup.
Boil in heavy pan over medium heat until card crack stage ( 290 degrees to 300)

1/4 lb. blanched almonds, toasted
Pup almonds on a pizza pan
Spread candy thinly over nuts and chill
When cold, melt 12 pkg semi-sweet chocolate and pour thinly over the candy (I used Lindt 70% cacao and put it on only 1 side)
Chill and turn over and repeat chocolate on the other side.
